The difference between a wine and a wine of excellence can be summed up in three fundamental elements: soil, climate and grape variety. But even with these basics aligned, it is always possible to go one step further in defining the characteristics that will render a wine, something unique. A wine is determined by its very origin, the variety and soil in which it is rooted, but from then on the precise combination of each element and the winemaker’s approach in every phase will endow the final product with a character and personality of its own.
This wine is made from selected, quality grapes produced by noble vines over 40 years old; vineyards are carefully managed and yields are kept on the low end. Harvest is carried out at dawn, so as to protect the huge fruit potential and keep the grapes’ temperature as low as possible. 10 days of cold maceration at 10ºC achieves better aromatic and color extraction. Alcoholic fermentation takes place in small stainless steel tanks, always keeping a rigorous temperature control at between 28ºC and 30ºC. The process then moves on to 14 to 21 days of maceration, fostering body and structure. To achieve an elegant wine of intense bouquet, 24 months of ageing go by in 100% new French Oak barrels. A further 6 months of bottle ageing ensues before release to the market. The wine stabilizes and purifies itself naturally during its long barrel ageing.
Tasting Notes
This wine is the highest expression of our terroir, the result of several years spent selecting only the best grapes, a fruit that would ensure optimum quality. Its intense, deep purple color opens up to the nose with an intense and complex bouquet of blackberries, cassis and blueberries, spices and vanilla, as well as a touch of chocolate, the latter a gift of the long ageing in French Oak. Muscular and well balanced in mouth, round and bearing elegant, velvety tannins.
This is a wine for wine lovers, delicate, exquisite and imbued with the memory of our land… Ideal serving temperature is 17ºC to 19ºC and its expressiveness will benefit if uncorked a few hours before serving.
