Winemaking
Grapes are hand harvested at dawn in order to keep them at the lowest possible temperature. After a cold maceration period of 12 hours at 10ºC (50ºF) to extract more aromas, the wine is fermented with selected wine yeasts in small stainless steel tanks under a rigorous temperature control between 12ºC and 15ºC. Part of the wine is fermented in new French and American oak barrels. Malolactic fermentation is partially completed. The wine is stabilized and filtered before being bottled.
Tasting Note
Behind its lovely medium intense color with green reflects, this Syrah conceals a nose of fresh white fruits (apple, pineapple), with vanilla notes characteristic of its barrel fermentation. On the palate, this intense fruity character is joined by good acidity and balance for the taster's pleasure, disappearing in a medium long end.
Food and Wine
This wine is a good accompaniment to salads, sumer cold lunches, fishes and pork meat. It may also be enjoyed as an aperitif
