Winemaking
Grapes for this wine are hand-picked very early in the morning; lower temperatures help preserve the aromatic potential of the fruit. After the maceration phase extracts the primary notes, grapes are pressed as gently as possible, so as to keep the astringency in check. Then it’s on to small stainless steel tanks for cold fermentation with selected yeasts, which is carried out at between 12ºC and 14ºC to safeguard the most delicate aromas. A few more weeks in stainless steel and on its lees give this wine added roundness in mouth, after which it is stabilized, filtered and released to the market. Camino Real Sauvignon Blanc’s acidity is 100% natural.
Tasting Notes
Pale yellow with green reflections; delicate aromas of melon, white peach and citric notes. Very fresh attack in mouth; feels balanced, round and flavorful to the palate. Enjoy as young as possible.
Food Pairing
A very good choice for an aperitif wine, to pair with a cheese plate, but also combines nicely with fine fish and seafood in general.
