Winemaking
Grapes are hand harvested very early in the morning in order to maintain their integrity at the lowest possible temperature. After maceration to extract more primary aromas contained in the grape skins, they’re pressed at low pressure so as not to extract too much astringency. Cold fermentation is carried out with selected wine yeasts in small stainless steel casks at between 12º and 14ºC (54º and 57ºF) in order to preserve the most delicate aromas, then in stainless steel tanks. After aging a couple of weeks on the lees to give the wine more roundness in the mouth, it’s stabilized and filtered in order to be marketed soon after. The acidity of Camino Real Sauvignon Blanc is 100% natural.
Tasting Note
Pale yellow with green highlights, this wine has delicate melon and white peach aromas and citric notes. It has a very fresh initial mouth feel; on the palate, it's well-balanced, round and flavorful. Enjoy as young as possible.
Food and Wine
This wine is excellent served as an aperitif and accompanied by a cheese platter, but it also goes very well with fish and gourmet shellfish.
